These are on the water tower roof. Climb the barrels behind the outhouse, jump to the awning, then to the tower. You need a precise double-jump. The spurs are in a bird's nest.

Bonetown has a permanent set of gallows with a skeleton still dangling from the noose. Aim your lasso (or simply jump and grab) at the left boot of the hanging corpse. You will rip the boot off. Collectible Type: Pamphlet (Fire Bottle Upgrade)
Location: The cemetery behind the church.
There are six above-ground sarcophagi in the Bonetown graveyard. Only the third one from the left (the one with a cracked lid and a raven sitting on it) is interactive. Push the lid off. Instead of a corpse, you’ll find a Pamphlet that upgrades your Fire Bottles to "Greek Fire" — a blue flame that spreads faster and kills undead in one hit. These are on the water tower roof

Collectible Type: Rare Horse Finding Aid
Location: The windmill platform.
Climb the rickety windmill in the center of Bonetown. On the highest wooden platform, next to a dead sniper’s nest, sits a human skull wearing a tiny sombrero. Picking this up triggers a unique journal entry from John Marston.
Why collect it? While it has no monetary value, owning the "Skull of the Saint" slightly increases your chances of finding the Four Horses of the Apocalypse in the Mexican region. Keep it in your inventory.
